- In a separate bowl, whisk together 1 1/4 cups milk, 2 large eggs, and 1 tsp vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, whisking until a smooth batter forms. The batter should be thin, like pancake batter.
- Heat a 6-inch nonstick skillet over medium heat. Lightly spray with cooking spray.
- Pour 1/4 cup of batter into the hot skillet and immediately tilt to spread the batter evenly into a thin circle.
