How to Make Bert S Special Meatloaf
- Preheat oven to 350°F (175°C).
- In a large bowl, combine all ingredients (see below) and gently mix until just combined. Do not overmix.
- Shape the mixture into a loaf and place it in a greased 9x13 inch baking pan.
- Lay bacon slices over the top and along the sides of the meatloaf.
- Bake for 1 hour and 10 minutes.
- Add nearly cooked potatoes (about 1 lb, quartered) around the meatloaf and continue baking for an additional 20-25 minutes.
- During the last 10 minutes of baking, prepare gravy using the pan drippings (see optional gravy recipe below).
- Remove the meatloaf from the oven and let it rest, covered with foil, for 5-10 minutes before slicing and serving. Serve with gravy if desired.
