How to Make Cottage Shepherd's Pie
- Preheat oven to 375°F (190°C).
- Peel and chop 2 lbs of potatoes. Boil until tender (about 15-20 minutes).
- While potatoes boil, heat 1 tbsp olive oil in a large skillet over medium heat. Add 1 chopped onion and cook until softened, about 5 minutes.
- Add 1.5 lbs ground beef to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Stir in 1 tbsp tomato paste, 1 tsp dried thyme, 1/2 tsp salt, and 1/4 tsp black pepper.
- Add 1 cup beef broth and 1 cup frozen peas and carrots. Simmer for 5 minutes, or until heated through.
- Mash the boiled potatoes with 1/4 cup butter, 1/4 cup milk, and salt and pepper to taste.
- Pour the beef mixture into a greased 9x13 inch baking dish.
- Spread the mashed potatoes evenly over the beef mixture.
- Bake for 20-25 minutes, or until the potatoes are golden brown and the filling is bubbly.
- Let cool slightly before serving.
