How to Make Dad And Char's Excellent Yellow Moong Dal Curry

  1. In a small bowl, dissolve 1/2 teaspoon asafoetida powder in 1/2 cup of water. Mix well until completely dissolved and set aside.
  2. Rinse 1 cup yellow moong dal (split pigeon peas) thoroughly under cold water.
  3. In a large pot, combine the rinsed lentils with 12-14 cups of water. Bring to a boil over high heat.
  4. Reduce heat to medium-low, cover, and simmer until the lentils are tender and easily mashed (approximately 30-40 minutes).
  5. Once cooked, use an electric beater to mash the lentils until smooth. Cover and set aside.
  6. Heat 2 tablespoons of vegetable oil in a separate pot over medium heat.
  7. Add 1 teaspoon mustard seeds, 1/2 teaspoon fenugreek seeds (methi), and 1/2 teaspoon cumin seeds. Cook until the seeds splutter and crackle.
  8. Quickly reduce heat to low, add 10-12 curry leaves, and stir continuously.
  9. Add 2 finely chopped green chilies and 1 inch ginger (finely chopped). Stir continuously and cook until the raw smell of ginger is gone and it turns slightly brown (about 2-3 minutes).
  10. Add 1/2 teaspoon turmeric powder and 1/2 - 1 teaspoon red chili powder (adjust to taste). Mix well and cook for 2 minutes.
  11. Add 1 cup chopped tomatoes and cook, stirring continuously, until softened (about 5 minutes).
  12. Pour in the asafoetida mixture (from step 1).
  13. Add 1 cup of water and bring to a boil, stirring constantly for 3 minutes.
  14. Remove from heat.
  15. Gently pour the tomato mixture into the mashed lentil curry and mix well.
  16. Add salt to taste and stir.
  17. Bring to a boil, stirring frequently.
  18. Bring to a boil a second time.
  19. Reduce heat to low, remove from heat, and serve immediately with plain white basmati rice and yogurt.
