How to Make Hawaiian Cornish Hens

  1. Preheat oven to 400°F (200°C).
  2. Prepare the stuffing (see recipe below) and set aside.
  3. Rinse and thoroughly pat dry two Cornish hens (approximately 1.5 lbs each).
  4. Season hens generously inside and out with salt and pepper.
  5. Loosely stuff each hen with the prepared stuffing, being careful not to overfill.
  6. In a small bowl, whisk together all glaze ingredients (see recipe below).
  7. Brush hens generously with the Hawaiian glaze.
  8. Place hens in a roasting pan and roast at 400°F (200°C) for 45-50 minutes, basting frequently with pan juices and glaze.
  9. Turn hens halfway through to ensure even browning.
  10. Add 1 ½ cups of chicken broth to the roasting pan, scraping up any browned bits from the bottom.
  11. Add any remaining glaze to the pan juices.
  12. Baste hens again with the pan juices and glaze.
  13. Reduce oven temperature to 325°F (160°C). Continue roasting for approximately 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C) and juices run clear.
