- 2 ounces mozzarella cheese, shredded
- 1/2 cup pizza sauce
- Part Skim Ricotta Cheese
- Oregano Leaves
- 1/2 teaspoon garlic powder
- 1/4 cup grated parmesan cheese
How to Make Pizza Stuffed Potato
- Preheat oven to 450°F (232°C). Wash and scrub potatoes thoroughly.
- Cut potatoes in half lengthwise and place cut-side down on a baking sheet.
- Bake for 20 minutes, or until slightly softened.
- While potatoes bake, prepare the filling. In a medium bowl, mash the potato pulp from one potato half (reserve the other for another use or a snack!).
- Add shredded mozzarella cheese, pizza sauce, ricotta cheese, oregano, garlic powder, salt, and pepper to the mashed potato. Mix well to combine.
- Scoop out the remaining potato pulp from the baked potato halves, leaving about a 1/4-inch thick shell.
- Spoon the pizza mixture evenly into each potato shell.
- Top each stuffed potato with half of the parmesan cheese.
- Return stuffed potatoes to the baking sheet and bake for another 5-10 minutes, or until cheese is melted and bubbly and potatoes are heated through.
