  • 2 ounces mozzarella cheese, shredded
  • 1/2 cup pizza sauce
  • Part Skim Ricotta Cheese
  • Oregano Leaves
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated parmesan cheese

How to Make Pizza Stuffed Potato

  1. Preheat oven to 450°F (232°C). Wash and scrub potatoes thoroughly.
  2. Cut potatoes in half lengthwise and place cut-side down on a baking sheet.
  3. Bake for 20 minutes, or until slightly softened.
  4. While potatoes bake, prepare the filling. In a medium bowl, mash the potato pulp from one potato half (reserve the other for another use or a snack!).
  5. Add shredded mozzarella cheese, pizza sauce, ricotta cheese, oregano, garlic powder, salt, and pepper to the mashed potato. Mix well to combine.
  6. Scoop out the remaining potato pulp from the baked potato halves, leaving about a 1/4-inch thick shell.
  7. Spoon the pizza mixture evenly into each potato shell.
  8. Top each stuffed potato with half of the parmesan cheese.
  9. Return stuffed potatoes to the baking sheet and bake for another 5-10 minutes, or until cheese is melted and bubbly and potatoes are heated through.
