Ingredients for Pork With Pineapple
- Pork Fillet

How to Make Pork With Pineapple
- Cut 1 lb pork tenderloin into thin strips, about 5cm (2 inches) long.
- In a medium bowl, whisk together the marinade ingredients: 2 tbsp soy sauce, 1 tbsp brown sugar, 1 tbsp rice vinegar, 1 tsp grated ginger, 1 clove minced garlic, and 1/2 tsp cornstarch.
- Add the pork to the marinade, mix well, and let marinate at room temperature for at least 15 minutes while you prepare the remaining ingredients.
- Heat 1 tbsp vegetable oil in a wok or large skillet over high heat until almost smoking.
- Add 2 cloves minced garlic and stir-fry for 15 seconds, or until golden brown.
- Add the marinated pork and stir-fry for 3-4 minutes, until browned.
- Add 1 cup chopped fresh pineapple, 1-2 finely chopped fresh red chilies (optional), and 2 tbsp chopped fresh coriander. Stir-fry for another 2-3 minutes.
- Stir in 1 tbsp soy sauce and 1 tbsp brown sugar. Cook until the sauce thickens slightly.
