Ingredients for Pork With Pineapple

  • Pork Fillet
  • Peanut Oil
  • 3 cloves garlic (1 for marinade, 2 for stir-frying)
  • Fresh Coriander
  • Dark Soy Sauce
  • 2 tbsp brown sugar (1 tbsp for marinade, 1 tbsp for stir-frying)
  • 1 cup chopped fresh pineapple
  • Green Chili Pepper
  • Light Soy Sauce
  • Rice Wine
  • Sesame Oil
  • Cornflour

How to Make Pork With Pineapple

  1. Cut 1 lb pork tenderloin into thin strips, about 5cm (2 inches) long.
  2. In a medium bowl, whisk together the marinade ingredients: 2 tbsp soy sauce, 1 tbsp brown sugar, 1 tbsp rice vinegar, 1 tsp grated ginger, 1 clove minced garlic, and 1/2 tsp cornstarch.
  3. Add the pork to the marinade, mix well, and let marinate at room temperature for at least 15 minutes while you prepare the remaining ingredients.
  4. Heat 1 tbsp vegetable oil in a wok or large skillet over high heat until almost smoking.
  5. Add 2 cloves minced garlic and stir-fry for 15 seconds, or until golden brown.
  6. Add the marinated pork and stir-fry for 3-4 minutes, until browned.
  7. Add 1 cup chopped fresh pineapple, 1-2 finely chopped fresh red chilies (optional), and 2 tbsp chopped fresh coriander. Stir-fry for another 2-3 minutes.
  8. Stir in 1 tbsp soy sauce and 1 tbsp brown sugar. Cook until the sauce thickens slightly.
  9. Garnish with extra chopped coriander and serve immediately with rice.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
