How to Make Pretty Freaking Awesome Pulled Pork Crock Pot

  1. Mix all rub ingredients (see below). Generously apply rub to the pork shoulder, wrap tightly in plastic wrap, and refrigerate for at least 6 hours (or preferably overnight).
  2. Slice one large onion and place it in the bottom of your slow cooker.
  3. Place the rubbed pork shoulder on top of the onion slices.
  4. Slice the remaining onion and place it on top of the pork shoulder.
  5. Pour 12 ounces of ginger ale over the pork.
  6. Cover and cook on low for 8-10 hours, or on high for 4-6 hours, turning the pork halfway through for even cooking.
  7. Remove the pork from the slow cooker. Strain the cooking liquid, reserving 1/4 - 1/2 cup of the liquid and the cooked onion.
  8. Using clean hands or two forks, shred the pork, discarding any large pieces of fat, bone, or skin.
  9. Return the shredded pork to the slow cooker.
  10. Add the reserved cooking liquid to the pork (adjust amount depending on desired moisture).
  11. Finely chop the reserved cooked onion and add it back to the slow cooker.
  12. Stir in your favorite BBQ sauce (about 1 cup).
  13. Continue to cook on low for 2-4 hours with the lid on, allowing the flavors to meld.
  14. Serve on hamburger buns, topped with extra BBQ sauce, coleslaw, and pickles.
