How to Make Pretty Freaking Awesome Pulled Pork Crock Pot
- Mix all rub ingredients (see below). Generously apply rub to the pork shoulder, wrap tightly in plastic wrap, and refrigerate for at least 6 hours (or preferably overnight).
- Slice one large onion and place it in the bottom of your slow cooker.
- Place the rubbed pork shoulder on top of the onion slices.
- Slice the remaining onion and place it on top of the pork shoulder.
- Pour 12 ounces of ginger ale over the pork.
- Cover and cook on low for 8-10 hours, or on high for 4-6 hours, turning the pork halfway through for even cooking.
- Remove the pork from the slow cooker. Strain the cooking liquid, reserving 1/4 - 1/2 cup of the liquid and the cooked onion.
- Using clean hands or two forks, shred the pork, discarding any large pieces of fat, bone, or skin.
- Return the shredded pork to the slow cooker.
- Add the reserved cooking liquid to the pork (adjust amount depending on desired moisture).
- Finely chop the reserved cooked onion and add it back to the slow cooker.
- Stir in your favorite BBQ sauce (about 1 cup).
- Continue to cook on low for 2-4 hours with the lid on, allowing the flavors to meld.
- Serve on hamburger buns, topped with extra BBQ sauce, coleslaw, and pickles.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
