- Add minced onion and garlic to the skillet and cook until softened, about 2 minutes.
- Season pork chops with salt and pepper. Remove chops from skillet and set aside.
- In a small bowl, combine 1/4 cup of pan drippings with 1/2 cup of bread crumbs. Season with salt and pepper.
- Set aside 1/2 cup of the seasoned bread crumbs.
- Spread remaining seasoned crumbs evenly in a 9x13 inch baking pan.
- In a separate bowl, combine rhubarb, sugar, flour, and cinnamon.
- Spoon half of the rhubarb mixture over the bread crumbs in the baking pan.
- Arrange pork chops on top of the rhubarb mixture.
- Spoon the remaining rhubarb mixture over the pork chops.
- Drizzle with honey.
- Cover the baking pan with foil and bake for 45 minutes.
- Remove foil, sprinkle with the remaining 1/2 cup of bread crumbs, and dot with 1 tablespoon of butter.
- Bake uncovered for 15 minutes, or until the pork chops are cooked through and the rhubarb is bubbly.
