How to Make Rhubarb Pork Chops

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, heat oil and butter over medium-high heat. Add pork chops and cook until browned on both sides, about 3-4 minutes per side.
  3. Add minced onion and garlic to the skillet and cook until softened, about 2 minutes.
  4. Season pork chops with salt and pepper. Remove chops from skillet and set aside.
  5. In a small bowl, combine 1/4 cup of pan drippings with 1/2 cup of bread crumbs. Season with salt and pepper.
  6. Set aside 1/2 cup of the seasoned bread crumbs.
  7. Spread remaining seasoned crumbs evenly in a 9x13 inch baking pan.
  8. In a separate bowl, combine rhubarb, sugar, flour, and cinnamon.
  9. Spoon half of the rhubarb mixture over the bread crumbs in the baking pan.
  10. Arrange pork chops on top of the rhubarb mixture.
  11. Spoon the remaining rhubarb mixture over the pork chops.
  12. Drizzle with honey.
  13. Cover the baking pan with foil and bake for 45 minutes.
  14. Remove foil, sprinkle with the remaining 1/2 cup of bread crumbs, and dot with 1 tablespoon of butter.
  15. Bake uncovered for 15 minutes, or until the pork chops are cooked through and the rhubarb is bubbly.
