How to Make Simple Chicken Biryani

  1. Preheat oven to 200°C (400°F).
  2. In a large bowl, combine 1.5 lbs boneless, skinless chicken thighs, 1 tbsp ground cumin, 1 tbsp garam masala, and 1 tsp turmeric. Toss to coat thoroughly.
  3. Heat 1 tbsp olive oil in a Dutch oven or large oven-safe pot over medium-high heat. Add chicken in batches, ensuring not to overcrowd the pan. Cook for 3-4 minutes per side, until browned. Add a little more oil if necessary.
  4. Remove chicken from the pot and set aside.
  5. Add 2 tbsp olive oil to the pot. Add 1 large onion, finely chopped, 2 tbsp grated ginger, and 4 cloves garlic, minced. Cook over medium heat until onions are soft and golden brown (about 5-7 minutes).
  6. Add 2 cups basmati rice and cook for 2 minutes, stirring constantly.
  7. Pour in 2.5 cups chicken stock (or water). Return the chicken to the pot in a single layer.
  8. Bring to a simmer, then cover the pot tightly with a lid.
  9. Transfer the pot to the preheated oven and bake for 30-40 minutes, or until the rice is tender and the liquid is absorbed. Fluff gently with a fork.
  10. Garnish with fresh coriander leaves before serving.
  11. Serve hot with our delicious Mint-Cumin Yogurt (Recipe #203296).
