How to Make The Gardenburger

  1. Combine 1 cup bulgur wheat with 1 1/2 cups boiling water in a small bowl. Let sit for 1 hour to absorb liquid.
  2. Quarter 8 oz cremini mushrooms. Steam for 10 minutes until tender.
  3. Remove mushrooms from steamer and set aside.
  4. Steam 1 medium onion, quartered, for 10 minutes until softened.
  5. Remove onions from steamer and set aside. Keep mushrooms and onions separate.
  6. In a separate bowl, combine 1/2 cup rolled oats with 1/2 cup water. Let soak for 10 minutes.
  7. Drain excess water from both the soaked oats and the bulgur.
  8. Combine the drained bulgur, drained oats, steamed mushrooms, 1/2 cup cooked rice, 1/2 cup shredded cheddar cheese, 1/4 cup shredded parmesan cheese, 1 teaspoon dried thyme, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt in a food processor. Pulse 5-7 times until ingredients are finely chopped but not pureed.
  9. Transfer the mixture to a large bowl. Add the steamed onions and 2 tablespoons cornstarch. Mix well to combine.
  10. Preheat oven to 300°F (150°C). Lightly oil a baking sheet and a large skillet.
  11. Form the mixture into 4-6 patties.
  12. Brown the patties in the skillet over medium heat for 2-3 minutes per side.
  13. Transfer the browned patties to the prepared baking sheet.
  14. Bake for 25-30 minutes, flipping halfway through, until heated through and slightly firm.
  15. Let cool completely before serving. These can be frozen for later use.
