How to Make 3 Alarm Chili
- Brown 1 lb ground beef in a large skillet over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
- Add 1 large onion, chopped, and 2 cloves garlic, minced, to the skillet. Stir in 1 tablespoon canola oil.
- Sauté for 5-7 minutes, or until the onions are softened and slightly browned.
- Stir in 1 tbsp chili powder, 1 tsp cumin, 1/2 tsp oregano, 1/4 tsp cayenne pepper (optional, for extra heat), and salt and pepper to taste.
- Cook for 2 minutes, stirring constantly, to ensure the spices are well coated.
- In a large (6-quart) pot or Dutch oven, pour in 28 oz (2 cans) of chicken broth.
- Carefully add the browned beef mixture to the pot.
- Add 28 oz (2 cans) of crushed tomatoes, 1-2 jalapenos, finely chopped (adjust to your spice preference), and 2 bay leaves.
- Stir in 2 tablespoons of red pepper paste.
- Bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour for a richer flavor. The longer it simmers, the better it tastes!
- Remove bay leaves before serving. Serve with your favorite chili toppings, such as shredded cheese, sour cream, and chopped onions.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
