- Canned Artichoke Hearts
- 1 cup celery (finely chopped)
- Green Onion
- 1/2 cup mayonnaise
- 8 medium tomatoes
- Cooked Shrimp
- 2 tablespoons crumbled cooked bacon
How to Make A Tomato Well Stuffed
- Preheat oven to 350°F (175°C).
- Finely chop 1 cup celery and 2 green onions.
- In a medium bowl, combine 1 (14 ounce) can artichoke hearts (drained and chopped), chopped celery, green onions, and 1/2 cup mayonnaise. Mix well.
- Gently peel and scoop out the seeds from 8 medium tomatoes. Reserve the tomato pulp for another use (optional).
- Cook 1/2 pound shrimp (peeled and deveined) in a lightly oiled pan until pink and opaque, about 3-5 minutes. Set aside to cool slightly.
- Just before serving, gently fold the cooked shrimp into the artichoke mixture.
- Fill each tomato with the shrimp and artichoke mixture.
- Place stuffed tomatoes on a bed of fresh lettuce leaves.
- Sprinkle with 2 tablespoons of crumbled cooked bacon.
- Serve immediately and enjoy!
