  • Canned Artichoke Hearts
  • 1 cup celery (finely chopped)
  • Green Onion
  • 1/2 cup mayonnaise
  • 8 medium tomatoes
  • Cooked Shrimp
  • 2 tablespoons crumbled cooked bacon

How to Make A Tomato Well Stuffed

  1. Preheat oven to 350°F (175°C).
  2. Finely chop 1 cup celery and 2 green onions.
  3. In a medium bowl, combine 1 (14 ounce) can artichoke hearts (drained and chopped), chopped celery, green onions, and 1/2 cup mayonnaise. Mix well.
  4. Gently peel and scoop out the seeds from 8 medium tomatoes. Reserve the tomato pulp for another use (optional).
  5. Cook 1/2 pound shrimp (peeled and deveined) in a lightly oiled pan until pink and opaque, about 3-5 minutes. Set aside to cool slightly.
  6. Just before serving, gently fold the cooked shrimp into the artichoke mixture.
  7. Fill each tomato with the shrimp and artichoke mixture.
  8. Place stuffed tomatoes on a bed of fresh lettuce leaves.
  9. Sprinkle with 2 tablespoons of crumbled cooked bacon.
  10. Serve immediately and enjoy!
