Adi's Shepherd's Pie Recipe

This Shepherd's Pie recipe holds a special place in my heart! Created when I was just 13 for my brother, Adi (hence the name!), it's been a family favorite ever since. Unlike some recipes, I use frozen corn to keep everything wonderfully moist and tender. Get ready for a comforting classic with a heartwarming story – perfect for a family dinner or a cozy night in! My eyeballed measurements are included, but feel free to adjust to your liking.

How to Make Adi's Shepherd's Pie

  1. Preheat oven to 350°F (175°C).
  2. Finely chop 1 large onion. In a large skillet, sauté the onion in 2 tablespoons of oil until softened (about 5 minutes). Set aside.
  3. Boil or steam 2 lbs potatoes until tender. Mash with 1/4 cup of butter, salt and pepper to taste.
  4. In a large bowl, combine 1.5 lbs ground beef, 1 large egg, 1/2 cup breadcrumbs, 1 teaspoon salt, 1/2 teaspoon black pepper, 1 teaspoon garlic powder, and 1/2 teaspoon onion powder. Mix well.
  5. Press the beef mixture into a 9x13 inch casserole dish.
  6. Spread 1 (15 ounce) package of frozen corn over the beef.
  7. Spread the mashed potatoes evenly over the corn. Gently pat down and crimp the edges.
  8. Bake for 50-60 minutes, or until the potatoes are golden brown and the filling is bubbling.
  9. During the last 5-10 minutes of baking, brush the top of the potatoes with 1 teaspoon of oil for extra browning. If desired, broil for 1-2 minutes to achieve a deeper golden brown color. Let stand for 10 minutes before serving.
