How to Make Anglo Indian Beef Or Lamb Stir Fry
- Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat.
- Add 1 large onion, chopped, and 2 cloves garlic, minced, and sauté until softened, about 5 minutes.
- Add 1 inch ginger, grated, and 1 green chili, finely chopped (optional), and sauté for another minute until fragrant.
- Stir in 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon turmeric powder, 1/4 teaspoon cayenne pepper (or to taste), and 1/4 teaspoon garam masala. Cook for 30 seconds, stirring constantly, until fragrant.
- Add 1 pound beef or lamb, cut into bite-sized pieces (leftover roast works perfectly!). Stir-fry for 5-7 minutes, until browned.
- Add 1 large potato, cut into 1-inch cubes, and 1/2 cup chopped tomatoes. Stir-fry for another 5 minutes.
- Pour in 1/4 cup water or beef/lamb stock, cover, and simmer for 10-15 minutes, or until the potatoes are tender.
- Stir in 1/4 cup chopped cilantro before serving. Serve hot with rice or naan bread.
