- 1 medium head cauliflower

How to Make Alu Gobhi Potatoes And Cauliflower
- Wash and peel 1 lb potatoes. Cut into 1/2-inch thick pieces.
- Microwave potatoes, covered, for 6-8 minutes, or until slightly softened.
- Heat 2 tablespoons oil in a wide skillet over high heat.
- Add 1 teaspoon mustard seeds and cover. Reduce heat to medium as soon as seeds start popping.
- Add 1/2 teaspoon cumin seeds and cook until fragrant (about 30 seconds).
- Add 2 minced garlic cloves and sauté for 1 minute.
- Add the par-cooked potatoes, 1 medium head of cauliflower cut into florets, 1/2 teaspoon turmeric powder, 1/4 teaspoon red chili powder (adjust to taste), and salt to taste.

- Stir in 1/2 cup chopped green peas (optional), 1/2 cup chopped carrots (optional), and 1/2 cup water if needed.

- For the traditional version, stir in 1 tablespoon mango powder and 1/2 cup chopped red onion. For a lemon twist, stir in 2 tablespoons lemon juice and 1/2 cup chopped red onion.
