Ingredients for Apple Extreme Upside Down Cake

  • 1/3 cup (65g) unsalted butter + 1/4 cup (50g) unsalted butter, melted
  • 1/2 cup (100g) packed light brown sugar
  • Red Baking Apples
  • All Purpose Flour
  • 1 1/2 cups (300g) granulated sugar
  • 2 teaspoons baking powder
  • Ground Ginger
  • Ground Cinnamon
  • 1 cup (240ml) milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Vanilla Ice Cream

How to Make Apple Extreme Upside Down Cake

  1. Preheat oven to 350°F (175°C).
  2. Place 1/3 cup (65g) unsalted butter in a 9x9x2-inch baking pan. Place in the preheated oven for 5 minutes, or until melted.
  3. Remove from oven and sprinkle evenly with 1/2 cup (100g) packed light brown sugar.
  4. Stir the melted butter and brown sugar together until combined.
  5. Arrange 9 apple halves (about 3 medium apples) cut-side down in the butter-sugar mixture.
  6. Bake for 10-15 minutes, or until the apples are slightly softened and bubbly.
  7. Meanwhile, peel and coarsely shred the remaining 2-3 medium apples (approximately 3 cups shredded). Set aside.
  8. In a large bowl, whisk together 2 cups (250g) all-purpose flour, 1 1/2 cups (300g) granulated sugar, 2 teaspoons baking powder, 1 teaspoon ground cinnamon, and 1/2 teaspoon ground ginger.
  9. Add the shredded apples, 1 cup (240ml) milk, 1/4 cup (50g) unsalted butter (melted), 1 large egg, and 1 teaspoon vanilla extract to the dry ingredients.
  10. Beat with an electric mixer on low speed until just combined. Then, beat on medium speed for 1 minute.
  11. Carefully pour the batter over the apples in the baking pan, spreading evenly.
  12. Bake for 35-40 minutes, or until a wooden toothpick inserted near the center comes out clean.
  13. Let the cake cool in the pan on a wire rack for 5 minutes.
  14. Run a knife or spatula around the edges of the pan to loosen the cake.
  15. Invert the cake onto a serving platter.
  16. Spoon any remaining sauce from the pan over the top of the inverted cake.
  17. Cool for an additional 20 minutes.
  18. Serve warm with a scoop of vanilla ice cream (optional).

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
