How to Make Apple Extreme Upside Down Cake
- Preheat oven to 350°F (175°C).
- Place 1/3 cup (65g) unsalted butter in a 9x9x2-inch baking pan. Place in the preheated oven for 5 minutes, or until melted.
- Remove from oven and sprinkle evenly with 1/2 cup (100g) packed light brown sugar.
- Stir the melted butter and brown sugar together until combined.
- Arrange 9 apple halves (about 3 medium apples) cut-side down in the butter-sugar mixture.
- Bake for 10-15 minutes, or until the apples are slightly softened and bubbly.
- Meanwhile, peel and coarsely shred the remaining 2-3 medium apples (approximately 3 cups shredded). Set aside.
- In a large bowl, whisk together 2 cups (250g) all-purpose flour, 1 1/2 cups (300g) granulated sugar, 2 teaspoons baking powder, 1 teaspoon ground cinnamon, and 1/2 teaspoon ground ginger.
- Add the shredded apples, 1 cup (240ml) milk, 1/4 cup (50g) unsalted butter (melted), 1 large egg, and 1 teaspoon vanilla extract to the dry ingredients.
- Beat with an electric mixer on low speed until just combined. Then, beat on medium speed for 1 minute.
- Carefully pour the batter over the apples in the baking pan, spreading evenly.
- Bake for 35-40 minutes, or until a wooden toothpick inserted near the center comes out clean.
- Let the cake cool in the pan on a wire rack for 5 minutes.
- Run a knife or spatula around the edges of the pan to loosen the cake.
- Invert the cake onto a serving platter.
- Spoon any remaining sauce from the pan over the top of the inverted cake.
- Cool for an additional 20 minutes.
- Serve warm with a scoop of vanilla ice cream (optional).
