How to Make Apple Oat Coffee Cake

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a 9x9x2 inch square baking pan.
  3. Prepare the oat streusel (see separate instructions below). Set aside.
  4. In a large bowl, cream together 1 cup (2 sticks) softened butter and 1 ¾ cups granulated sugar using an electric mixer on low speed for 30 seconds, scraping down the bowl frequently.
  5. Beat on medium speed for 2 minutes, scraping down the bowl occasionally.
  6. Beat in 3 large eggs one at a time, then stir in 1 teaspoon vanilla extract.
