How to Make Apple Scones
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together 2 cups all-purpose flour, 1/2 cup granulated sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
- Cut in 1/2 cup (1 stick) cold unsalted butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a separate bowl, combine 2 medium apples (peeled, cored, and diced), and 1/2 cup milk.
- Add the wet ingredients to the dry ingredients and stir gently until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently pat into a 1-inch thick circle.
- Use a sharp knife or pizza cutter to cut the circle into 8 wedges.
- Carefully transfer the scones to the prepared baking sheet.
- Brush the tops with a little extra milk and sprinkle with 1 tablespoon granulated sugar and 1/2 teaspoon ground cinnamon.
- Bake for 15-18 minutes, or until golden brown and cooked through.
- Let cool slightly on the baking sheet before serving warm with butter and marmalade.
- Optional: Add 1/2 cup currants to the batter in step 5.
