  • Canned Chick Peas
  • Dried Apricot
  • Shallot
  • 1/2 teaspoon salt
  • Ground Ginger
  • Ground Cumin
  • Ground Cinnamon
  • Ground Red Pepper
  • 1 pound ground turkey
  • Cooking Spray
  • Multi Grain Hamburger Buns

How to Make Apricot Turkey Burgers

  1. Preheat grill to medium-high heat.
  2. Place 1 (15-ounce) can chickpeas, drained and rinsed, in a food processor.
  3. Pulse 3 times, or until coarsely chopped. Do not over-process.
  4. In a large bowl, combine the pulsed chickpeas, 1 cup dried apricots (chopped), 1 pound ground turkey, 1/2 cup chopped red onion, 1/4 cup chopped fresh cilantro, 2 cloves garlic (minced), 1 tablespoon olive oil, 1 teaspoon ground cumin, and 1/2 teaspoon salt.
  5. Gently mix all ingredients until just combined. Be careful not to overmix.
  6. Divide the mixture into 6 equal portions. Shape each portion into a 1/2-inch thick patty.
  7. Lightly spray a grill rack with cooking spray.
  8. Place the patties on the prepared grill rack.
  9. Grill for 6 minutes per side, or until a meat thermometer inserted into the center registers 165°F (74°C).
  10. Remove the patties from the grill and let them rest for 5 minutes.
  11. While the patties rest, place the buns, cut-side down, on the grill rack.
  12. Grill the buns for 1 minute, or until lightly toasted.
  13. Place 1 patty on the bottom half of each bun.
  14. Top each burger with 1 tablespoon of tzatziki sauce (recipe not included, but easily found online) and the top half of the bun.
  15. Serve immediately and enjoy!

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
