How to Make Apricot Turkey Burgers
- Preheat grill to medium-high heat.
- Place 1 (15-ounce) can chickpeas, drained and rinsed, in a food processor.
- Pulse 3 times, or until coarsely chopped. Do not over-process.
- In a large bowl, combine the pulsed chickpeas, 1 cup dried apricots (chopped), 1 pound ground turkey, 1/2 cup chopped red onion, 1/4 cup chopped fresh cilantro, 2 cloves garlic (minced), 1 tablespoon olive oil, 1 teaspoon ground cumin, and 1/2 teaspoon salt.
- Gently mix all ingredients until just combined. Be careful not to overmix.
- Divide the mixture into 6 equal portions. Shape each portion into a 1/2-inch thick patty.
- Lightly spray a grill rack with cooking spray.
- Place the patties on the prepared grill rack.
- Grill for 6 minutes per side, or until a meat thermometer inserted into the center registers 165°F (74°C).
- Remove the patties from the grill and let them rest for 5 minutes.
- While the patties rest, place the buns, cut-side down, on the grill rack.
- Grill the buns for 1 minute, or until lightly toasted.
- Place 1 patty on the bottom half of each bun.
- Top each burger with 1 tablespoon of tzatziki sauce (recipe not included, but easily found online) and the top half of the bun.
