How to Make Apricot Turkey Burgers

  1. Preheat grill to medium-high heat.
  2. Place 1 (15-ounce) can chickpeas, drained and rinsed, in a food processor.
  3. Pulse 3 times, or until coarsely chopped. Do not over-process.
  4. In a large bowl, combine the pulsed chickpeas, 1 cup dried apricots (chopped), 1 pound ground turkey, 1/2 cup chopped red onion, 1/4 cup chopped fresh cilantro, 2 cloves garlic (minced), 1 tablespoon olive oil, 1 teaspoon ground cumin, and 1/2 teaspoon salt.
  5. Gently mix all ingredients until just combined. Be careful not to overmix.
  6. Divide the mixture into 6 equal portions. Shape each portion into a 1/2-inch thick patty.
  7. Lightly spray a grill rack with cooking spray.
  8. Place the patties on the prepared grill rack.
  9. Grill for 6 minutes per side, or until a meat thermometer inserted into the center registers 165°F (74°C).
  10. Remove the patties from the grill and let them rest for 5 minutes.
