How to Make Aromatic Turkey Curry
- Heat 2 tablespoons of vegetable oil in a large pan or Dutch oven over medium heat.
- Add 1 large chopped onion and 2 cloves minced garlic. Cook until softened, about 5 minutes.
- Stir in 1 inch piece of grated ginger, 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1/2 teaspoon turmeric, 1/4 teaspoon cayenne pepper (optional), and 1/2 teaspoon garam masala. Fry for 1 minute more, stirring constantly, until fragrant.
- Add 1 (28 ounce) can crushed tomatoes, 1.5 lbs turkey or chicken (cut into 1-inch pieces), and 2 cups chicken or vegetable stock. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the meat is cooked through.
- Stir in 1/2 cup heavy cream or crème fraîche. Taste and adjust seasonings as needed.
- Serve hot with rice or naan bread. Garnish with fresh cilantro, if desired.
