- Drain the water and add 8 cups of fresh water to the pot.
- Chop 1 medium onion, 1 green bell pepper, 2 stalks celery, and 4 cloves of garlic.
- Add the chopped vegetables to the beans.
- Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of dried thyme, 1 teaspoon of seasoned salt, and 1 teaspoon of Creole seasoning.
- Cover the pot and bring the mixture to a boil.
- Reduce heat to medium-low and simmer for 2 1/2 hours, stirring occasionally and mashing the beans against the sides of the pot to create a creamy texture.
- Slice 1 pound of andouille sausage (or your favorite smoked sausage) into 1/4-inch pieces and add to the beans.
- Cook for an additional 30 minutes.
- Serve the red beans over hot, steamed rice.
- For the Jiffy Cornbread (optional, but highly recommended!): Prepare a box of Jiffy corn muffin mix according to package directions, but add 1 stick (1/2 cup) of melted butter and 1 extra large egg for extra richness.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
