- Spaghetti
- 1/2 cup chopped shallots
- Garlic Cloves
- Sliced Mushrooms
- 1 cup frozen peas
- 2 tablespoons olive oil
- 1/2 cup heavy whipping cream
- 3 large egg yolks
- 4 ounces prosciutto, diced
- Chicken Breasts
- Fresh Parmesan Cheese
- Salt and pepper to taste

How to Make Awesome Spaghetti Carbonara W Chicken
- Heat olive oil in a large skillet over medium-high heat.
- Add shallots and garlic; sauté for 5 minutes, until softened.
- Meanwhile, cook pasta according to package directions. Reserve about 1/2 cup pasta water before draining.
- Add mushrooms, prosciutto, and chicken to the skillet. Cook for 5-10 minutes, until chicken is cooked through.
- In a medium bowl, whisk together egg yolks, heavy cream, and 1/2 cup of the Parmesan cheese. Season with salt and pepper.
- During the last minute of pasta cooking, add frozen peas.
- Drain pasta, reserving 1/2 cup of pasta water. Add pasta to the skillet with the chicken mixture.
- Immediately pour the egg mixture over the hot pasta and toss to combine. The residual heat from the pasta will cook the eggs. Add a little pasta water if the sauce is too thick.
- Allow to sit for approximately 5 minutes to thicken the sauce further.
- Serve immediately, topped with remaining Parmesan cheese and freshly ground black pepper.
