How to Make Back Uh The Can Hawaiian Chicken
- In a medium bowl, whisk together the sauce ingredients in this order: 2 tablespoons cornstarch, 1/4 cup white vinegar, 1/2 cup ketchup, 1 cup chicken broth (from an Albertsons can!), 1/4 cup packed brown sugar, and 1/4 cup reserved pineapple juice.
- Set aside the sauce.
- Chop 1.5 lbs boneless, skinless chicken breasts into bite-sized pieces. Heat 1 tablespoon of oil (vegetable or canola) in a large skillet over medium-high heat.
- Add 2 cloves minced garlic and the chicken to the hot oil. Cook for about 5 minutes, or until browned on all sides.
- Add 1 cup chopped carrots and cook for 2 more minutes.
- Pour the sauce over the chicken and bring to a simmer. Reduce heat to medium-low.
- Add 1 cup chopped green bell pepper and 1 (20 ounce) can of pineapple chunks (reserve 1/4 cup juice), and return to a simmer. Cook for 20 minutes, stirring occasionally, until the sauce has thickened and the chicken is cooked through.
- Serve hot over hot, fluffy white rice. Garnish with chopped green onions, if desired.
