How to Make Baked Pumpkin Oatmeal
- Preheat oven to 350°F (175°C).
- Place 1 cup of cranberries in a bowl and cover with hot water to plump them for 10-15 minutes.
- In a large bowl, whisk together 1 (15-ounce) can pumpkin puree, 2 large eggs, 1/2 cup maple syrup, and 1 teaspoon vanilla extract.
