How to Make Baked Shrimp Scampi
- Preheat oven to 425°F (220°C).
- Peel, devein, and butterfly 1 pound of large shrimp, leaving tails on.
- In a large bowl, toss shrimp with 2 tablespoons olive oil, 1/4 cup dry white wine, 2 teaspoons salt, and 1 teaspoon black pepper. Set aside.
- While shrimp marinates, prepare the garlic butter topping. In a medium bowl, mash together 1/2 cup (1 stick) softened unsalted butter, 2 cloves minced garlic, 2 tablespoons finely chopped shallots, 2 tablespoons chopped fresh parsley, 1 tablespoon chopped fresh rosemary, 1/4 teaspoon red pepper flakes, zest of 1 lemon, juice of 1/2 lemon, 1 large egg yolk, 1/4 cup panko bread crumbs, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well combined.
- Arrange shrimp in a single layer, cut-side down, in a 14-inch oval gratin dish, tails curling towards the center.
- Pour remaining marinade over shrimp.
- Spread the garlic butter mixture evenly over the shrimp.
- Bake for 10-12 minutes, or until shrimp is pink and opaque and the topping is golden brown and bubbly.
- For extra browning, broil for 1 minute, watching carefully to prevent burning.
- Serve immediately with lemon wedges, crusty bread, and your favorite pasta.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
