How to Make Baked Veggie Burgers

  1. Preheat oven to 375-400°F (190-200°C). Lightly spray a baking sheet with non-stick cooking spray.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 2 cups of chopped vegetables (onions, peppers, zucchini, etc.) and cook for 5-7 minutes, or until tender-crisp.
  3. In a large bowl, mash 1 (15-ounce) can of beans (drained and rinsed). Add the cooked vegetables, 1 large egg, 1/2 cup breadcrumbs, 1/4 cup grated parmesan cheese (optional), 1 teaspoon dried oregano, 1/2 teaspoon garlic powder, salt and pepper to taste. Mix well to combine.
  4. Divide the mixture into 4 equal portions. Shape each portion into a patty about 1/2 inch thick.
  5. Place the patties on the prepared baking sheet. Lightly spray the tops of the patties with cooking spray.
  6. Bake for 20 minutes. Flip the burgers and bake for an additional 10-15 minutes, or until heated through and slightly browned.
  7. Serve on buns with your favorite toppings!
