How to Make Baked Ziti Our Way

  1. Saute 1 medium onion, chopped, and 4 cloves garlic, minced, with 1 lb Italian sausage (removed from casings), in 2 tablespoons olive oil until sausage is browned (about 8-10 minutes).
  2. Drain off excess grease if necessary.
  3. Add 28 ounces crushed tomatoes, 8 ounces sliced mushrooms, 1/2 cup dry red wine, 1 cup chicken broth, 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Simmer for 1 hour, stirring occasionally.
  4. Cook 1 lb ziti pasta according to package directions. Drain.
  5. Stir in cooked pasta, 16 ounces cottage cheese, 1 cup shredded mozzarella cheese, and 1/2 cup grated Parmesan cheese into the sauce.
  6. Pour into a greased 9x13 inch baking dish. Top with remaining 1 cup shredded mozzarella cheese and 1/2 cup grated Parmesan cheese.
  7. Bake at 350°F (175°C) for 30 minutes. Broil for the last 2-3 minutes to brown the cheese.
  8. Let stand for 10 minutes before serving.
