  • 2 tablespoons all-purpose flour

How to Make Barbs Butter Bean Or Lima Bean Soup

  1. Rinse 2 cups dried butter beans (or lima/great northern beans). Place in a large pot, cover with 8 cups of water, and bring to a boil. Reduce heat, cover, and let sit for 1 hour. Drain the water.
  2. Add 6 cups of fresh water to the beans and bring to a boil. Reduce heat and simmer for 45-60 minutes, or until beans are tender.
  3. (Optional) While beans simmer, cook 1 lb ham hock or 8 oz smoked kielbasa in a separate saucepan until cooked through. Shred ham hock or slice kielbasa.
  4. Add the cooked ham/kielbasa (if using), 1 (28 ounce) can diced tomatoes with jalapeños, 1 medium onion (chopped), 2 carrots (chopped), and 2 celery stalks (chopped) to the bean pot. Simmer for 20 minutes.
  5. Season generously with salt and pepper to taste. For a thicker soup, whisk together 2 tablespoons of all-purpose flour with 1/4 cup of cold water to form a slurry. Add the slurry to the soup and simmer for 5 more minutes, stirring constantly. Adjust seasonings as needed.
