How to Make Bars Of Iron

  1. Preheat oven to 350°F (175°C). Grease a 13x9x2-inch baking pan.
  2. Chop 1 cup of raisins.
  3. In a large bowl, cream together 1 cup (2 sticks) softened butter, 1 ½ cups packed brown sugar, 1 large egg, and ½ cup molasses until light and fluffy.
  4. In a separate bowl, whisk together 3 cups all-purpose flour, 1 cup dry milk powder, ½ cup wheat germ, 2 teaspoons baking powder, 1 teaspoon baking soda, 1 teaspoon salt, and 1 teaspoon ground ginger.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with ½ cup milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Stir in 3 cups rolled oats, the chopped raisins, and ½ cup sliced almonds.
  7. Pour batter into the prepared pan and spread evenly.
  8. Sprinkle the remaining ½ cup sliced almonds over the top.
  9. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out with just a few moist crumbs attached.
  10. Let cool completely in the pan before cutting into 1x4-inch bars.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
