How to Make Bean Bolognese Eating Well

  1. Boil a large pot of salted water for the pasta.
  2. Mash 1/2 cup cooked great northern beans with a fork in a small bowl.
  3. Heat 1 tablespoon olive oil in a medium saucepan over medium heat.
  4. Add 1 medium onion, chopped; 1 medium carrot, chopped; 2 celery stalks, chopped; and 1/2 teaspoon salt.
  5. Cover and cook, stirring occasionally, until softened, about 10 minutes.
  6. Add 2 cloves garlic, minced, and 1 bay leaf.
  7. Cook, stirring, until fragrant, about 15 seconds.
  8. Add 1/2 cup dry red wine.
  9. Increase heat to high and boil until most of the liquid evaporates, 3 to 4 minutes.
  10. Add 28 ounces canned crushed tomatoes with their juices, 2 tablespoons chopped fresh parsley, and the mashed beans.
  11. Add 1 tablespoon balsamic vinegar.
  12. Bring to a lively simmer and cook, stirring occasionally, until thickened, about 6 minutes.
  13. Add 1 (15-ounce) can great northern beans, drained and rinsed.
  14. Cook, stirring occasionally, until heated through, 1 to 2 minutes more.
  15. Meanwhile, cook 1 pound pasta (your choice!) in the boiling water until al dente, about 9 minutes or according to package directions.
  16. Drain the pasta.
  17. Divide the pasta among 4 bowls.
  18. Discard the bay leaf and top the pasta with the Bolognese sauce.
  19. Alternatively, mix the pasta and sauce together and divide into servings.
  20. Serve immediately, garnished with grated Parmesan cheese and extra parsley.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
