How to Make Beanless Chili
- Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat. Add 1.5 lbs ground beef and 1 lb ground chicken; cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add 1 large onion (chopped), 2 celery stalks (chopped), and 4 cloves garlic (minced) to the pot. Cook for 5-7 minutes, or until softened.
- Stir in 1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can tomato sauce, 1 (10 ounce) can diced tomatoes and green chilies (Rotel), 1 tablespoon chili powder, 1 teaspoon cumin, 1 teaspoon oregano, 1/2 teaspoon cayenne pepper (or more, to taste), 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Bring the chili to a simmer, then reduce heat to low, cover, and cook for 1 hour, stirring occasionally.
- Taste and adjust seasonings as needed. Garnish with your favorite toppings, such as shredded cheese, sour cream, or chopped green onions, before serving.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
