How to Make Beef And Barley Soup Heavenly Healthy And Hearty
- In a large pot or Dutch oven, brown 1 lb beef stew meat over medium-high heat. Remove beef and set aside.
- Add 1 large chopped onion, 2 chopped carrots, 2 chopped turnips, and 2 chopped potatoes to the pot. Cook until softened, about 5 minutes.
- Stir in 1 cup pearl barley, 6 cups beef broth, 1 tsp dried thyme, 1 tsp dried rosemary, 1 bay leaf, salt, and pepper to taste.
- Return the beef to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for at least 1 hour, or until the beef is tender and barley is cooked through.
