How to Make Beef And Guinness Casserole

  1. Preheat your oven to 350°F (175°C).
  2. In a large oven-safe pot or Dutch oven, brown 1.5 lbs of beef stew meat over medium-high heat. Remove beef and set aside.
  3. Add 1 large onion, chopped, and 2 carrots, chopped, to the pot and sauté until softened, about 5 minutes.
  4. Stir in 2 cloves of minced garlic and cook for another minute until fragrant.
  5. Pour in 1 (12 oz) bottle of Guinness and 1 cup of beef broth. Bring to a simmer.
  6. Return the beef to the pot. Add 1 tbsp tomato paste, 1 tsp dried thyme, 1/2 tsp salt, and 1/4 tsp black pepper.
  7. Stir in 1 lb of potatoes, peeled and cubed, and 1 cup of frozen peas.
  8. Cover the pot and transfer to the preheated oven. Bake for 1 hour and 30 minutes, or until the beef is tender and the potatoes are cooked through.
  9. Serve hot and enjoy! Garnish with fresh parsley if desired.
