How to Make Beef With Cauliflower Crock Pot

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1.5 lbs beef stew meat, in batches, and cook, stirring occasionally, until browned on all sides (about 5-7 minutes per batch).
  2. Transfer browned beef to your slow cooker.
  3. Reduce heat to medium. Add 1 tablespoon olive oil to the skillet if needed. Add 1 medium onion, chopped, and cook until softened (about 5 minutes). Stir in 1 tablespoon grated ginger, 2 cloves garlic, minced, 1 cinnamon stick, 1/2 teaspoon black pepper, 2 bay leaves, 1 teaspoon ground cumin, and 1 teaspoon ground coriander. Cook for 1 minute more.
  4. Pour in 1 cup beef broth and 2 tablespoons tomato paste. Bring to a boil.
  5. Season with salt to taste.
  6. Transfer the onion mixture to the slow cooker. Stir well to combine with the beef.
  7. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  8. Remove and discard the bay leaves and cinnamon stick.
  9. Stir in 1 red bell pepper, chopped, and 1-2 jalapeƱos, finely minced (adjust to your spice preference).
