How to Make Berry Apple Fantasy Pie

  1. Prepare pie crust (2 1/4 cups all-purpose flour, 1 tsp salt, 1 cup (2 sticks) unsalted butter, chilled and cubed, 1/2 cup ice water). Divide dough in half, forming two balls.
  2. On a lightly floured surface, roll out one ball of dough into a 12-inch circle.
  3. Carefully transfer the dough to a 9-inch pie plate.
  4. In a large bowl, whisk together 3/4 cup granulated sugar, 1/4 cup tapioca starch, and 1 tsp ground cinnamon.
  5. Add 2 cups blackberries, 2 cups raspberries, and 3 cups thinly sliced apples (about 3 medium).
  6. Gently toss until the fruit is evenly coated with the sugar mixture.
  7. Let the filling stand for 15 minutes to allow the juices to release.
  8. Spoon the filling into the prepared pie crust.
  9. Dot the top of the filling with 2 tbsp cold unsalted butter, cut into small pieces.
  10. Trim the excess pastry even with the edge of the pie plate.
  11. Moisten the edge of the bottom crust with water.
  12. Roll out the remaining ball of dough into a 12-inch circle.
  13. Cut several slits in the top crust to allow steam to escape.
  14. Carefully place the top crust over the filling.
  15. Trim the top crust to 1/2 inch beyond the edge of the pie plate.
  16. Fold and crimp the edges of the top and bottom crusts to seal.
  17. Cover the edges of the crust with aluminum foil to prevent over-browning.
  18. Bake in a preheated 375°F (190°C) oven for 25 minutes.
  19. Remove the foil and bake for an additional 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
  20. Let the pie cool completely on a wire rack before serving.
