How to Make Chocolate Cherry Cookies

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour and cocoa powder. Set aside.
  3. In a large bowl, cream together softened butter and sugar until light and fluffy.
  4. Add baking soda, baking powder, and salt. Mix well.
  5. Beat in the egg and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Roll dough into 1-inch balls.
  8. Place dough balls 2 inches apart on prepared baking sheets.
  9. Press down the center of each ball with your thumb to create a slight indentation.
  10. Drain the cherries, reserving about 4 teaspoons of the juice.
  11. Place one cherry into the indentation of each cookie.
  12. In a small saucepan over low heat, melt the chocolate chips and condensed milk together, stirring constantly.
  13. Stir in 4 teaspoons of the reserved cherry juice until smooth. If the frosting is too thick, add more juice, 1 teaspoon at a time.
  14. Spoon about 1 teaspoon of the chocolate mixture over each cherry, spreading to cover.
  15. Bake for 10-12 minutes, or until the edges of the cookies are set.
  16. Let cool on the baking sheet for 1 minute before transferring to a wire rack to cool completely.
