How to Make Combination Fried Rice

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat for 1-2 minutes.
  2. Add 2 large eggs and gently scramble for 1 minute, until softly set. Remove from skillet and set aside.
  3. Chop 1 medium onion, 2 cloves garlic, and 1 bell pepper (any color) into small pieces.
  4. Heat the remaining 2 tablespoons of oil in the skillet.
  5. Add the chopped onion, garlic, and bell pepper. Stir-fry for 3 minutes until softened.
  6. Add 1 cup of cooked meat (chicken, beef, pork, shrimp - your choice!) and 1/2 cup frozen peas. Stir-fry for 2 minutes.
  7. Add 3 cups cooked rice, 2 tablespoons soy sauce, and 1-2 tablespoons chili-garlic sauce (adjust to taste).
  8. Stir-fry for 5 minutes, or until the rice is heated through and everything is well combined.
  9. Gently stir in the scrambled eggs.
  10. Garnish with 2 chopped green onions and serve immediately.
