How to Make Creamy Seafood And Mushroom Pasta
- Slice 8 ounces of cremini mushrooms.
- Mince 2 cloves of garlic.
- Cook 1 pound of penne pasta according to package directions until al dente. Drain, reserving 1 cup of pasta cooking water.
- Set the cooked pasta aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add 1 pound of shrimp and cook until pink, about 2 minutes per side. Transfer to a large bowl.
- Add the sliced mushrooms to the skillet and sauté for 5 minutes.
- Add the minced garlic and cook for 1 minute more.
- Pour in 1/2 cup of dry white wine and cook until about half is absorbed, stirring and scraping up any browned bits from the bottom of the pan.
- Return the shrimp to the skillet. Add 6 ounces of lump crabmeat and 1 cup of heavy cream.
- Simmer for 2 minutes, or until the sauce slightly thickens.
- Stir in the zest and juice of 1 lemon, 1 teaspoon of fresh rosemary, salt, and pepper to taste.
- Add 2 tablespoons of butter and stir until melted.
- Add the cooked penne to the skillet and toss to combine, adding some of the reserved pasta water if needed to create a creamy consistency.
- Remove from heat and serve immediately, garnished with grated Parmesan cheese.
