How to Make Creamy Seafood And Mushroom Pasta

  1. Slice 8 ounces of cremini mushrooms.
  2. Mince 2 cloves of garlic.
  3. Cook 1 pound of penne pasta according to package directions until al dente. Drain, reserving 1 cup of pasta cooking water.
  4. Set the cooked pasta aside.
  5. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  6. Add 1 pound of shrimp and cook until pink, about 2 minutes per side. Transfer to a large bowl.
  7. Add the sliced mushrooms to the skillet and sauté for 5 minutes.
  8. Add the minced garlic and cook for 1 minute more.
  9. Pour in 1/2 cup of dry white wine and cook until about half is absorbed, stirring and scraping up any browned bits from the bottom of the pan.
  10. Return the shrimp to the skillet. Add 6 ounces of lump crabmeat and 1 cup of heavy cream.
  11. Simmer for 2 minutes, or until the sauce slightly thickens.
  12. Stir in the zest and juice of 1 lemon, 1 teaspoon of fresh rosemary, salt, and pepper to taste.
  13. Add 2 tablespoons of butter and stir until melted.
  14. Add the cooked penne to the skillet and toss to combine, adding some of the reserved pasta water if needed to create a creamy consistency.
  15. Remove from heat and serve immediately, garnished with grated Parmesan cheese.
