How to Make Earl's Kung Pao Protein Of Your Choice

  1. Whisk together marinade ingredients (soy sauce, rice vinegar, sesame oil, cornstarch, sugar), adding cornstarch last. No lumps!
  2. Cut protein (tofu or chicken) into 1-inch cubes.
  3. Add protein to marinade and mix well.
  4. Marinate for at least 1 hour (longer is better!).
  5. While marinating, prepare sauce and chop vegetables.
  6. Whisk together sauce ingredients (soy sauce, rice vinegar, brown sugar, cornstarch, sesame oil). Set aside.
  7. Heat 2 tbsp oil in a wok over medium-high to high heat.
  8. Add marinated protein to wok and stir-fry until cooked through (chicken browned, tofu golden).
  9. Remove protein from wok and set aside.
  10. Add remaining 2 tbsp oil to wok. Add vegetables and stir-fry until tender-crisp.
  11. Remove vegetables and set aside.
  12. Cook pasta according to package directions until al dente. Drain.
  13. Add garlic and ginger to wok and stir-fry until fragrant.
  14. Add sauce, chili paste/flakes (or chilies), and bring to a boil. Stir constantly to prevent sticking.
  15. Add cooked protein, vegetables, green onions, and nuts.
  16. Stir until heated through.
  17. Remove from heat and stir in a few drops of sesame oil.
  18. Add sauce mixture to cooked pasta and toss to combine.
  19. Garnish with extra nuts.
