How to Make Pasta Jambalaya
- Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat.
- Add the sliced Andouille sausage and sauté until light brown, about 5 minutes.
- Remove the sausage with a slotted spoon and set aside on paper towels to drain.
- Pour off any excess grease from the pot.
- Add the remaining 2 tablespoons of olive oil to the pot and heat over medium heat.
- Add the chopped onion, green bell pepper, celery, and minced garlic. Stir in the bay leaves, cayenne pepper, paprika, oregano, thyme, salt, and pepper.
- Cover and cook, stirring frequently, until the vegetables are almost tender, about 8 minutes.
- Stir in the crushed tomatoes and diced tomatoes with their juices. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes to allow the flavors to meld.
- Add the cooked sausage, Worcestershire sauce, and hot pepper sauce.
- Simmer uncovered for 5 minutes, or until the sauce has slightly thickened.
- While the sauce simmers, cook the pasta according to package directions in a large pot of boiling salted water until al dente.
- Add the shrimp to the pasta pot during the last 2 minutes of cooking. The shrimp is done when pink and opaque.
- Drain the pasta and shrimp; set aside.
- Remove and discard the bay leaves from the jambalaya sauce.
- Add the drained pasta and shrimp to the jambalaya sauce. Toss gently to combine.
- Transfer to a serving bowl.
- Serve immediately, passing grated Parmesan cheese separately.
