How to Make Pasta Jambalaya

  1. Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium heat.
  2. Add the sliced Andouille sausage and sauté until light brown, about 5 minutes.
  3. Remove the sausage with a slotted spoon and set aside on paper towels to drain.
  4. Pour off any excess grease from the pot.
  5. Add the remaining 2 tablespoons of olive oil to the pot and heat over medium heat.
  6. Add the chopped onion, green bell pepper, celery, and minced garlic. Stir in the bay leaves, cayenne pepper, paprika, oregano, thyme, salt, and pepper.
  7. Cover and cook, stirring frequently, until the vegetables are almost tender, about 8 minutes.
  8. Stir in the crushed tomatoes and diced tomatoes with their juices. Bring to a boil.
  9. Reduce heat to low, cover, and simmer for 15 minutes to allow the flavors to meld.
  10. Add the cooked sausage, Worcestershire sauce, and hot pepper sauce.
  11. Simmer uncovered for 5 minutes, or until the sauce has slightly thickened.
  12. While the sauce simmers, cook the pasta according to package directions in a large pot of boiling salted water until al dente.
  13. Add the shrimp to the pasta pot during the last 2 minutes of cooking. The shrimp is done when pink and opaque.
  14. Drain the pasta and shrimp; set aside.
  15. Remove and discard the bay leaves from the jambalaya sauce.
  16. Add the drained pasta and shrimp to the jambalaya sauce. Toss gently to combine.
  17. Transfer to a serving bowl.
  18. Serve immediately, passing grated Parmesan cheese separately.
