How to Make Pork And Prawn Shrimp Stir Fry

  1. Cut 250g pork tenderloin into thin strips. In a bowl, marinate the pork with 2 tbsp soy sauce, 1 tbsp sherry, 1 tbsp minced garlic, 1 tbsp minced ginger, and 1 tsp black pepper. Let it marinate for at least 30 minutes.
  2. Shell 200g prawns (if necessary). Set aside.
  3. Prepare your favorite vegetables: 1 cup broccoli florets, 1 cup sliced bell peppers (any color), 1/2 cup sliced onion, 1 cup bean sprouts, 1 cup bok choy, 1/2 cup baby corn. You can substitute or add other vegetables as desired.
  4. Finely chop 1-2 red chilies (adjust to your spice preference). Set aside.
  5. Blanch broccoli for 2 minutes in boiling water. Add to the other prepared vegetables. This ensures even cooking.
  6. In a small bowl, whisk together 1/2 cup chicken or vegetable stock, 1 tbsp sesame oil, 1 tbsp oyster sauce, and 1 tbsp cornflour mixed with 2 tbsp water.
  7. Drain the marinade from the pork into the sauce mixture.
  8. Heat 1 tbsp vegetable oil in a wok or large skillet over high heat.
  9. Stir-fry the vegetables for 3-4 minutes, adding the remaining minced garlic and ginger, and chili flakes (to taste). Remove and set aside in a warm oven.
  10. Add another 1 tbsp vegetable oil to the wok. Stir-fry the pork for 1-2 minutes until browned. Add the prawns and cook for another 2-3 minutes until pink and opaque.
  11. Pour the sauce mixture into the wok, stirring constantly until it thickens.
  12. Add the cooked vegetables back to the wok and toss to combine.
  13. Serve immediately over 250g cooked Chinese noodles of your choice.
