How to Make Pork And Prawn Shrimp Stir Fry
- Cut 250g pork tenderloin into thin strips. In a bowl, marinate the pork with 2 tbsp soy sauce, 1 tbsp sherry, 1 tbsp minced garlic, 1 tbsp minced ginger, and 1 tsp black pepper. Let it marinate for at least 30 minutes.
- Shell 200g prawns (if necessary). Set aside.
- Prepare your favorite vegetables: 1 cup broccoli florets, 1 cup sliced bell peppers (any color), 1/2 cup sliced onion, 1 cup bean sprouts, 1 cup bok choy, 1/2 cup baby corn. You can substitute or add other vegetables as desired.
- Finely chop 1-2 red chilies (adjust to your spice preference). Set aside.
- Blanch broccoli for 2 minutes in boiling water. Add to the other prepared vegetables. This ensures even cooking.
- In a small bowl, whisk together 1/2 cup chicken or vegetable stock, 1 tbsp sesame oil, 1 tbsp oyster sauce, and 1 tbsp cornflour mixed with 2 tbsp water.
- Drain the marinade from the pork into the sauce mixture.
- Heat 1 tbsp vegetable oil in a wok or large skillet over high heat.
- Stir-fry the vegetables for 3-4 minutes, adding the remaining minced garlic and ginger, and chili flakes (to taste). Remove and set aside in a warm oven.
- Add another 1 tbsp vegetable oil to the wok. Stir-fry the pork for 1-2 minutes until browned. Add the prawns and cook for another 2-3 minutes until pink and opaque.
- Pour the sauce mixture into the wok, stirring constantly until it thickens.
- Add the cooked vegetables back to the wok and toss to combine.
- Serve immediately over 250g cooked Chinese noodles of your choice.
