- 1 pound red prawns, heads removed, shells on
- Onion

- 1 teaspoon chili powder
- Paprika
- Salt to taste
- 1 cup coconut milk
- Juice of 1 lime or lemon
How to Make Rathu Isso Curry Sri Lankan Red Prawn Curry
- Wash 1 pound of prawns and remove heads, leaving shells on.
- In a large saucepan, combine 1 large onion (chopped), 2 cloves garlic (minced), 1 inch ginger (grated), 1-2 green chilies (finely chopped, adjust to taste), 1 teaspoon turmeric powder, 1 tablespoon curry powder, 1 teaspoon chili powder, 1/2 teaspoon cumin powder, 1/4 teaspoon black pepper, 1 (14.5 ounce) can of diced tomatoes, 1 cup coconut milk, 1 cup water, and 1 strip of daun pandan or rampe leaf (about 4 inches). Bring to a gentle simmer over medium heat.
- Reduce heat to low, cover, and simmer for 20 minutes, or until the onions are soft and the prawns are cooked through.
- Stir in the juice of 1 lime or lemon and taste. Add more salt or lime juice to your liking.
- Serve hot with rice and your favorite Sri Lankan side dishes.
