How to Make Tajine Msir Zeetoon Moroccan Chicken With Lemons
- Preheat oven to 160°C/325°F/Gas Mark 3.
- In a large bowl, combine 8 boneless, skinless chicken thighs and drumsticks with 1 tbsp ground cumin, 1 tbsp paprika, 1 tsp ground ginger, 1 tsp turmeric, 2 cloves garlic (minced), 1 tsp coriander powder, juice of 2 lemons, and 1/2 cup chopped bell peppers. Mix well.
- Marinate the chicken for at least 30 minutes (longer is better!).
- Add 2 tbsp all-purpose flour to the marinated chicken and toss to coat evenly.
- Transfer the chicken mixture to a baking dish. Add 1 (14.5 ounce) can of diced tomatoes (undrained), 1/2 cup pitted green olives, 1/4 cup pitted Kalamata olives, 1/4 cup pitted Castelvetrano olives, 4 lemon wedges, 2 tbsp olive oil, and 1 cup chicken stock.
- Bake uncovered for approximately 1 hour, or until the chicken is cooked through and the sauce has thickened. Serve hot with couscous or crusty bread.
