How to Make The Gumbo Pages Traditional Red Beans And Rice
- In a large pot or Dutch oven, brown the turkey sausage over medium heat. Remove sausage and set aside.
- Add the onion, bell pepper, and celery to the pot and cook until softened, about 5-7 minutes.
- Add the garlic and cook for 1 minute more.
- Stir in the liquid smoke, bay leaves, thyme, cayenne pepper, salt, and black pepper.
- Add the rinsed red beans and chicken broth. (If using dried beans, add them with the broth after soaking).
- Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours, or until the beans are tender. Stir occasionally to prevent sticking.
- While the beans are simmering, prepare the rice according to package directions.
- Once the beans are cooked, taste and adjust seasonings as needed. You can mash some of the beans against the side of the pot for a thicker consistency if desired.
- Serve the red beans and rice together. Garnish with chopped green onions (optional).
- Enjoy your delicious and healthy red beans and rice!
