How to Make Thick And Chunky Crock Pot Game Day Chili

  1. Partially freeze 2 lbs of stew meat for easier cutting. Cut into 1-inch cubes.
  2. In your 7-quart crock-pot, combine the stew meat, 1 large chopped onion, 2 cloves minced garlic, 1 (28-ounce) can crushed tomatoes, 1 (15-ounce) can tomato sauce, 1 (15-ounce) can kidney beans (drained and rinsed), 1 (15-ounce) can pinto beans (drained and rinsed), 1 cup beef broth, 2 tablespoons chili powder, 1 tablespoon cumin, 1 teaspoon oregano, 1/2 teaspoon cayenne pepper (optional), 1 teaspoon salt, 1/2 teaspoon black pepper, and 1 cup crushed corn chips.
  3. Gently stir all ingredients until well combined.
  4. Cover and cook on low for 6-8 hours, or on high for 4-5 hours, or until the stew meat is very tender.
  5. Remove from crock-pot and use an immersion blender to partially puree the chili for a thicker consistency (optional).
  6. Stir well before serving.
  7. Top with your favorite chili toppings: sour cream, shredded cheddar cheese, green onions, etc.
