- Whole Wheat Bread
- 1 tablespoon mayonnaise
- 1 tablespoon olive oil
- Sliced Mushrooms
- 1/2 medium zucchini, diced
- 1/4 medium onion, diced

- Monterey Jack Cheese
- 1/2 cup shredded cheddar cheese
- Tomatoes

How to Make Adorable Veggie Melts
- Preheat your broiler.
- Arrange the bread slices (about 4 slices) in a single layer on a baking sheet.
- Broil 4 to 5 inches from the heat source for about 2 minutes per side, or until lightly toasted.
- Spread 1 tablespoon of mayonnaise on one side of each toasted bread slice.
- In a large nonstick skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add 8 ounces sliced mushrooms, 1/2 medium zucchini (diced), 1/4 medium onion (diced), and 2 cloves garlic (minced).
- Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
- Remove from the heat and stir in 1/4 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust seasoning as needed.
- In a small bowl, combine 1/2 cup shredded cheddar cheese and 1/4 cup shredded mozzarella cheese.
- Top each bread slice with 2 slices of tomato, a pinch of black pepper, half of the sauteed vegetables, a few leaves of lettuce or 1 tablespoon bean sprouts, and half of the cheese mixture.
- Place the sandwiches on the prepared baking sheet.
- Broil for about 2 minutes, or until the cheese is melted and bubbly.
