  • Whole Wheat Bread
  • 1 tablespoon mayonnaise
  • 1 tablespoon olive oil
  • Sliced Mushrooms
  • 1/2 medium zucchini, diced
  • 1/4 medium onion, diced
  • 2 cloves garlic, minced
  • Salt & Freshly Ground Black Pepper
  • Monterey Jack Cheese
  • 1/2 cup shredded cheddar cheese
  • Tomatoes
  • Fresh Ground Pepper
  • Lettuce

How to Make Adorable Veggie Melts

  1. Preheat your broiler.
  2. Arrange the bread slices (about 4 slices) in a single layer on a baking sheet.
  3. Broil 4 to 5 inches from the heat source for about 2 minutes per side, or until lightly toasted.
  4. Spread 1 tablespoon of mayonnaise on one side of each toasted bread slice.
  5. In a large nonstick skillet, heat 1 tablespoon of olive oil over medium-high heat.
  6. Add 8 ounces sliced mushrooms, 1/2 medium zucchini (diced), 1/4 medium onion (diced), and 2 cloves garlic (minced).
  7. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
  8. Remove from the heat and stir in 1/4 teaspoon salt and 1/4 teaspoon black pepper. Taste and adjust seasoning as needed.
