How to Make Amazingly Cheesy Creamy Spinach Artichoke Dip
- Saute 1/2 medium yellow onion and 1/2 medium red bell pepper, chopped, in 1 tablespoon olive oil over medium heat for 5 minutes, until softened.
- Add 2 cloves garlic, minced, and saute for an additional 2 minutes until fragrant.
- Squeeze 10 ounces fresh spinach (about 2 cups packed) to remove excess water.
- Add the squeezed spinach to the onion mixture and cook for 1 minute, until wilted.
- Stir in 14 ounces canned artichoke hearts, drained and roughly chopped.
- In a separate bowl, using an electric mixer, beat together 8 ounces cream cheese (softened), 1/2 cup sour cream, and 1/4 cup mayonnaise until completely smooth and creamy.
