- Boneless Skinless Chicken Breasts

- Celery Rib
- Green Onions
- Bell Pepper

How to Make Amy S Favorite Chicken
- Pound chicken breasts to an even 1/2-inch thickness.
- Heat olive oil in a large, deep skillet over medium-high heat.
- Season chicken breasts with salt and pepper. Brown chicken for 2-3 minutes per side.
- Remove chicken from skillet and set aside.
- If using bacon, add it to the skillet and cook until crispy. Remove and set aside. Add more olive oil to the skillet if needed.
- Add frozen vegetables and frozen mushrooms (if using) to the skillet and sauté for 5 minutes, stirring occasionally.
- Add diced prosciutto and minced garlic. Sauté for another 1-2 minutes.
- Stir in cream of mushroom soup and white wine until well combined.
- Return chicken to the skillet. Cover and simmer for 20 minutes, or until chicken is cooked through and sauce has thickened. Turn chicken halfway through.
- Season sauce with additional salt and pepper, if desired.
- Top with freshly ground black pepper.
- Serve immediately over cooked long grain and wild rice (optional).
