  • 2 tablespoons olive oil
  • Garlic Clove
  • Celery Rib
  • Green Onions
  • Bell Pepper
  • Sliced Mushrooms
  • 4 ounces prosciutto, diced
  • Cream Of Onion Soup
  • White Wine

How to Make Amy S Favorite Chicken

  1. Pound chicken breasts to an even 1/2-inch thickness.
  2. Heat olive oil in a large, deep skillet over medium-high heat.
  3. Season chicken breasts with salt and pepper. Brown chicken for 2-3 minutes per side.
  4. Remove chicken from skillet and set aside.
  5. If using bacon, add it to the skillet and cook until crispy. Remove and set aside. Add more olive oil to the skillet if needed.
  6. Add frozen vegetables and frozen mushrooms (if using) to the skillet and sauté for 5 minutes, stirring occasionally.
  7. Add diced prosciutto and minced garlic. Sauté for another 1-2 minutes.
  8. Stir in cream of mushroom soup and white wine until well combined.
  9. Return chicken to the skillet. Cover and simmer for 20 minutes, or until chicken is cooked through and sauce has thickened. Turn chicken halfway through.
  10. Season sauce with additional salt and pepper, if desired.
