How to Make Andy's Fairfield Granola

  1. Preheat oven to 300°F (150°C).
  2. In a large bowl, combine 3 cups rolled oats, 1 cup sliced almonds (or 2 cups raw peanuts for chocolate peanut butter variation), 1/2 cup sunflower seeds, 1/4 cup brown sugar, 1/4 cup maple syrup, 1/4 cup melted coconut oil, 1 teaspoon ground cinnamon, 1/2 teaspoon salt, and 1/4 cup raisins (add after baking). If making chocolate peanut butter version, add 1/4 cup good quality cocoa powder at this stage.
  3. Spread the mixture evenly onto 2 large baking sheets lined with parchment paper.
  4. Bake for 40-60 minutes, stirring halfway through, until golden brown and crispy. Keep a close eye on it to prevent burning.
  5. Remove from oven and let cool completely on the baking sheets.
  6. Once cooled, gently stir in the raisins (or other dried fruits).
