How to Make Andy S Fairfield Granola
- Preheat oven to 300°F (150°C).
- In a large bowl, combine 3 cups rolled oats, 1 cup sliced almonds (or 2 cups raw peanuts for chocolate peanut butter variation), 1/2 cup sunflower seeds, 1/4 cup brown sugar, 1/4 cup maple syrup, 1/4 cup melted coconut oil, 1 teaspoon ground cinnamon, 1/2 teaspoon salt, and 1/4 cup raisins (add after baking). If making chocolate peanut butter version, add 1/4 cup good quality cocoa powder at this stage.
- Spread the mixture evenly onto 2 large baking sheets lined with parchment paper.
- Bake for 40-60 minutes, stirring halfway through, until golden brown and crispy. Keep a close eye on it to prevent burning.
- Remove from oven and let cool completely on the baking sheets.
- Once cooled, gently stir in the raisins (or other dried fruits).
